Crawfish & Gumbo Night: A Little Creole in the Rockies
This past weekend, Neon Cowboy hosted something special — a backyard-style Crawfish and Gumbo Night that brought a little Louisiana soul to the heart of Denver. The smell of spice, smoked sausage, and bubbling roux filled the air, and about 25 good folks rolled through for a night of food, drink, and serious Southern hospitality.
Aunt Pat’s Gumbo
We kicked things off with a pot of Aunt Pat’s chicken and sausage gumbo — straight from Baton Rouge and loaded with deep, dark roux, tender chicken thighs, and spicy andouille. We served it over white rice with file powder on the side, just the way she taught me. That first bite had people closing their eyes and shaking their heads — you know the kind.
The Boil
Next up: the crawfish boil. Poured straight across the table like the good Lord intended. We went all in —
Louisiana crawfish
Sweet corn on the cob
Red potatoes
Mushrooms (soaked up every bit of that seasoned boil)
Big chunks of andouille sausage
It was spicy, messy, and everything a crawfish boil should be. Butter-drenched fingers, spice-coated lips, and nothing but smiles.
The Drinks
We kept it classic with ice-cold beer and a house-made Lafitte’s-Style Hurricane — dark rum, passionfruit, lemon, and just enough trouble to make you dance. Let’s just say the Hurricanes were flowin’, and so was the good time.
A Taste of the South
Moments like these remind us why we built Neon Cowboy — not just to serve food, but to bring people together around tables, long boils, and shared memories. Whether you grew up in the bayou or just love a bowl of gumbo, this was a night for everyone.
