The Chef

Born in New Orleans and raised in the traditions of French Creole cooking, Chef Michael Sanguinetti learned early that great food brings people together. His culinary journey took him from the smoke and spice of Texas to the refined simplicity of Hawaii, before returning to the South to weave those influences into something entirely his own. In Denver, he opened Neon Cowboy - a neighborhood spot where morning coffee flows into craft cocktails, and chef-driven food stays rooted in honest ingredients and genuine connection. His cooking reflects a lifetime in motion: smoky and bright, grounded yet inventive, always chasing that perfect balance between comfort and craft.
